The project aimed to design and develop a comprehensive training curriculum and materials focused on traditional knowledge related to food processing. This toolkit served as a valuable resource for educators, enabling them to teach students about the engagement, complexity, and diversity inherent in their local agri-food systems. By integrating traditional knowledge into the curriculum, we honored cultural heritage and provided students with a deeper understanding of the interconnectedness of food, culture, and the environment. Through hands-on activities and creative exercises, such as visual arts tools, students engaged in meaningful learning experiences that fostered critical thinking and problem-solving skills. This approach enhanced the learning experience by incorporating creative elements and facilitated the documentation of local traditional knowledge on food processing. By developing an open-access GIS-based repository, we ensured that this valuable information was accessible to educators, researchers, and communities. By implementing this project, we empowered educators and students to explore and celebrate the richness of their local agri-food systems contributing to achieving the SDGs, specifically 4 and 12.
